BANANA FRITTERS PARADE ON MARDI GRAS

Traditionally, donuts are part of Mardi Gras in the West Indies, and enjoyed by all!

Fat Tuesday is a good day to overindulge. Otherwise it wouldn’t be called this way! This time we will make donuts with bananas. Carnival-goers eat them every year after the «vidé» (costumed street parade) to gain strength before facing the evening. But to tell the truth, donuts do not wait for Carnival to delight everyone and can be enjoyed all year round!

BANANA FRITTERS

INGRÉDIENTS:

• 3 very ripe plantain bananas or 6 fruit bananas

• 250g of flour

• 5 tablespoons of brown sugar

• 1 egg (optional)

• The juice of half a lime and a little lemon zest

• 1 teaspoon of ground cinnamon

• 1 teaspoon of vanilla extract

• 1 pinch of nutmeg

• 2 tablespoons of old rum

• 1 level teaspoon of yeast or baking soda

• 1 pinch of salt

• A little water if necessary

• 1 liter of oil

• Brown sugar for sprinkling

SWEET KWIZINE’S RECIPE

  1. Mash the bananas well with a fork in a bowl with the juice, lemon zest, cinnamon, nutmeg, sugar, rum and egg.
  1. Add the sifted flour, baking powder and pinch of salt.
  2. Mix well. If the dough seems too compact, add a little bit of water.
  3. Heat some oil in a medium-sized, shallow saucepan.
  4. When it is hot, pour the donut batter with a tablespoon. No more than 3 per batch so that the oil temperature does not drop too much and they do not stick together. The oil is hot enough when the donuts rise as soon as you dip them in. The oil shouldn’t become smoky.
  5. Halfway through cooking, turn them over and brown them on the other side.
  6. Once cooked, remove them from the pan with a slotted spoon and place them on absorbent paper.
  7. Sprinkle with brown sugar and a little lime zest and eat warm.
